From the sea, our Grilled Octopus stands out—braised to tenderness, marinated in garlic, bay leaves, and olive oil, then charred to perfection. It’s served with spiced peppers, a silky bean purée, activated walnuts, and a vibrant citrus dressing, capturing the bold, sun-kissed flavors of the coast.

For a heartier experience, the Slow-Cooked Lamb Shoulder offers deep, comforting richness, gently infused with aromatic spices and served with herbed bulgur or seasonal vegetables. And for a sweet finale, our Künefe—a golden pastry of shredded kadayif filled with soft cheese, drizzled with fragrant syrup, and paired with creamy gelato—delivers a warm, indulgent taste of tradition. Künefe

Künefe, also known as Kanafeh, is a beloved dessert rooted in Middle Eastern tradition. At Olive Thyme, our take on this classic indulgence features delicate layers of finely shredded kadayif pastry, enveloping a rich, unsalted cheese filling. It's baked to golden perfection, then soaked in fragrant sugar syrup and topped with toasted hazelnuts for a subtle crunch. Served with a scoop of creamy gelato, our künefe is a warm, decadent finale to any meal.

Mediterranean Octopus

Octopus is a celebrated delicacy in Mediterranean cuisine, featured in dishes ranging from hearty soups to vibrant salads and flame-grilled specialties. At Olive Thyme, our octopus is gently braised and marinated in garlic, bay leaves, and olive oil, then grilled and served with charred spiced peppers, a silky bean purée, activated walnuts, and a bright citrus dressing.

İmam Bayıldı

Imam Bayıldı at Olive Thyme is a beautifully presented and thoughtfully crafted take on the classic Turkish dish. This vegetarian delight features silky, slow-roasted eggplant halves generously filled with a savoury mixture of sweet onions, garlic, and ripe tomatoes, all delicately braised in high-quality olive oil. The balance of natural sweetness and acidity, paired with subtle aromatic herbs, brings out the depth of traditional Anatolian flavours while staying true to the restaurant’s modern Mediterranean flair. I cannot even compare it to any of the other Turkish restaurants in Brisbane as the quality of service, food and ambience of Olive Thyme is second to none! It’s a beautiful fine dining experience however it also makes you feel so at home! The menu is extremely creative and the staff are incredible with their service! Definitely something Brisbane has needed for a very long time and safe to say they delivered above and beyond! You truely need to experience it for yourself to understand this review!!

OMG this place. You need to go here if you love great food and good service! I took my wife here for her Bday dinner, words can not describe the service or the well cooked dishes to perfection. This is a real review and you need to go check this revamped restaurant out ASAP! Dont stress about the back pocket to much the menu is reasonably priced and the setting is perfect for any occasion! We went with a small group of friends. Our food was delicious, service was fantastic and always with lovely smiles. One of our friends has major food intolerances and she was looked after so well and with consideration to her restrictive diet. We were very impressed with this as the hostess really went out of her way to make sure she did not have anything in her chosen dish that would not suit her. I would recommend this place to anyone wanting a cosy atmosphere, friendly service and delicious food! Great night out.

The best Turkish real traditional food I’ve ever tasted in Brisbane! The Lahmacun is the bomb with the correct ingredients, first time I’ve ever came cross a restaurant doing the right way, and not copying like others..
